Grilled peaches are a fun and easy way to celebrate one of summer’s best fruits. For a super yummy dessert try our grilled peaches with meringue dolloped on top.

4
2 egg whites from Natural Grocers® Brand Organic Pasture-Raised Eggs
1 tablespoon Natural Grocers Brand Organic Extra Virgin Coconut Oil
4 organic ripe peaches, halved and pitted
1⁄8 teaspoon Natural Grocers Brand Bulk Cream of Tartar
2 1⁄2 tablespoons Natural Grocers Brand Bulk Organic Coconut Sugar, divided
Optional toppings
Natural Grocers Brand Bulk Pecan Pieces, Sliced or Slivered Almonds, or Granola
  1. Remove the eggs from the refrigerator and separate the yolks from the whites while they are cold. Allow the egg whites to sit for about 10 minutes to reach room temperature before whipping the meringue.
  2. Preheat grill to medium heat (~350° F).
  3. While the grill heats, melt the coconut oil. Brush the cut side of the peaches with the melted oil. Once the grill is hot, place the peaches on the grill, cut-side down. Grill for 4-6 minutes, or until grill marks are formed, before turning and grilling the other side. Sprinkle the cut side (with grill marks) with one tablespoon coconut sugar. Let the peaches cook on the grill for another 4-5 minutes, or until they are tender. Once done, place the peach halves on a baking sheet cut-side up.
  4. While the peaches are on the grill, pour the egg whites into a stainless steel or glass bowl (do not use plastic). Use a hand-mixer or stand mixer to whip the egg whites until they are glossy and smooth, about 2 minutes, then add the cream of tartar to help the egg whites hold their form. Slowly add one and a half tablespoons of sugar to the egg whites about 1 teaspoon at a time, whipping after each addition until the sugar is incorporated. Continue to whip the egg whites until stiff peaks form, whipping the egg whites for a total of 4-5 minutes from start to finish.
  5. Preheat the broiler. Fill the center of each peach half with a dollop of meringue. Place the peaches with meringue under the broiler and lightly brown the meringue until golden, 1-2 minutes. You may also use a kitchen torch to lightly brown the meringue.
  6. Carefully transfer the peaches to a serving platter or individual plates. Top with optional nuts or granola and serve immediately.
