Description

Potato soup can get pretty fancy these days, but we’re revisiting its roots, which lie in simple pantry ingredients. This soup comes together quickly in just one pot on the stovetop, creating a cozy bowl perfect for snuggling up with on a cool night. And if you want to “fancify” it a little, we’ve also offered suggestions for plenty of delicious toppings.

Ingredients

3 tablespoons organic Irish butter

1 large organic yellow onion, finely chopped

1 1⁄2 pounds organic russet potatoes (~2 large), peeled and cut into 1/2 - 3/4-inch cubes

1 (32-ounce) container organic vegetable broth

1 Natural Grocers® Brand Bulk Organic Bay Leaf

1⁄2 teaspoon Natural Grocers Brand Bulk Organic Thyme

1 teaspoon Natural Grocers Brand Bulk Real Salt

1⁄2 cup organic whole milk

Optional toppings

Shredded organic Irish cheddar cheese

Organic sour cream or Greek yogurt

Crispy Natural Grocers Brand Hickory Smoked Bacon pieces

Minced organic parsley, chives, or other organic herbs

Fried organic potato slices

Directions

Melt the butter in a large saucepan over medium heat, then add the chopped onion and cook until translucent, 7-8 minutes.
Add the potatoes, broth, bay leaf, thyme, salt, and pepper and increase the heat to high to bring to a boil, then reduce to a simmer. Cook until the potatoes are cooked through, approximately 20 minutes.
Remove the bay leaf and stir in the milk, cooking for two minutes. Taste and adjust seasonings as needed.
Use a potato masher to mash some of the potatoes. For a smoother consistency, use an immersion blender and blend the soup until smooth. Alternatively, place the soup in a blender, only filling the blender halfway. Remove the center cap of the lid and cover with a kitchen towel before blending; you may need to do this in batches.
Top with optional toppings and serve immediately.
