Watermelon and Feta Salad

Although it may seem like an odd combination, organic watermelon added to the basic mediterranean flavors of feta, basil, and olives tastes like summer in a bowl. Mix it up just prior to serving for a crisp, crunchy, sweet, and salty treat!

~7 cups
1 small seedless organic watermelon (~7 cups cubed)
1⁄2 cup crumbled organic feta cheese
1⁄2 cup finely sliced (chiffonade) organic basil
1⁄2 cup Natural Grocers® Brand Organic Sliced Kalamata Olives
2 tablespoons Natural Grocers Brand Organic Extra Virgin Olive Oil
Juice from 2 organic limes (~3 tablespoons)
1⁄4 teaspoon Natural Grocers Brand Bulk Real Salt
1⁄8 teaspoon Natural Grocers Brand Bulk Organic Ground Black Pepper
  1. Cut the watermelon flesh into bite-sized pieces (don’t be too precise, any shape is fine). The recipe can be scaled up or down depending on the size of the melon.
  2. In a large bowl gently combine the melon, feta, basil, and olives.
  3. In a small jar combine the olive oil, lime juice, salt, and pepper. Close the jar and shake vigorously to blend. Taste and season with more salt if desired.
  4. Pour the dressing over the watermelon salad and gently mix. Refrigerate for 30 minutes for best flavor. This salad is best eaten fresh, but any leftovers may be stored in the refrigerator for up to two days.
