Roasted Delicata Squash with Apples

Delicata squash is just as it sounds—delicate! Because the skin is edible, this squash is easy to prepare and roasts in less than 30 minutes. Add sliced apples and a sweet-tart dressing and you have a wonderfully delicious side dish, perfect for fall!

2 organic delicata squash
1 large organic tart apple (Pink lady, Granny smith), cored and thinly sliced
2 tablespoons Natural Grocers Brand® Organic Extra Virgin Olive Oil
2 tablespoons Natural Grocers Brand Organic Grade A Dark Maple Syrup
1⁄2 tablespoon Natural Grocers Brand Organic Apple Cider Vinegar
1⁄2 teaspoon Natural Grocers Brand Bulk Organic Ground Ginger
1⁄2 teaspoon Natural Grocers Brand Bulk Organic Ground Cinnamon
1⁄2 teaspoon Natural Grocers Brand Bulk Organic Sage Leaf
1⁄4 teaspoon Natural Grocers Brand Bulk Organic Ground Black Pepper
1⁄2 teaspoon Natural Grocers Brand Bulk Real Salt
Flaky finishing salt
Natural Grocers Brand Bulk Organic Pecan Pieces, optional
A few whole organic sage leaves, lightly sautéed in butter, optional for garnish
  1. Preheat oven to 425°F and line a baking sheet with parchment.
  2. Prepare the squash by washing the outside, then cut it in half lengthwise. Scoop out the seeds and slice the squash into ¼-inch half-moons.
  3. Whisk together the olive oil, maple syrup, apple cider vinegar, and seasonings in a large bowl to make the dressing.
  4. Gently toss the squash and apple slices in the dressing then lay them out on the prepared baking sheet. Bake for 20-25 minutes, or until tender.
  5. Transfer the cooked squash to a serving platter and sprinkle with some flaky salt to taste and pecan pieces and lightly sautéed sage leaves if using. Serve warm.
